We need to have a serious conversation about pork.
For decades, we have been taught to treat pork as a “utility meat” – white, lean, and something that must be cooked until it is grey and dry to be safe.
If that is how you are cooking, you are missing out on one of the greatest culinary experiences on earth.
At The Ribeye Club, we champion the Iberico breed not just because it tastes good, but because biologically, it is closer to a Wagyu steak than it is to a standard pork chop.
Here is the science behind the “Wagyu of Pork” and why you need to stop cooking it well-done.
1. It’s Not White Meat (The Myoglobin Factor)
Next time you open a pack of our Iberico Secreto or Iberico Collar, look at the color. It is deep crimson, almost purple. This is due to high levels of myoglobin—the same protein found in beef.
Because Iberico pigs are free-roaming animals that exercise constantly in the Dehesa (oak forests) of Spain, their muscles are oxygen-rich. When you cook this meat, it behaves like beef. It develops a crust. It rests like a steak. And most importantly, it should be served rosé (medium).
2. Their diet consists heavily on acorns
Because their diet consists heavily of acorns (bellotas), their fat composition is unique. It is over 55% Oleic Acid – the exact same healthy, monounsaturated fat found in olive oil.
This fat has a low melting point. If you overcook it, you render all that “liquid gold” away, leaving dry fibers. But if you sear it hard and keep the center pink, that fat melts inside the meat, creating a texture that is nutty, sweet, and incredibly juicy.
3. The Butcher’s "Secret" (Secreto)
If you want to start this journey, you need the Iberico Secreto. This is a hidden cut found behind the shoulder blade. It looks like a flat, highly marbled skirt steak, and for years, butchers kept it for themselves (hence the name).
How to Cook It:
Heat: Blazing hot pan (no oil needed—the acorn fat will provide it).
Time: 2 minutes per side. That’s it.
The Doneness: Aim for 60°C (Medium). It should be pink and glistening.
The Verdict
Stop treating Iberico like supermarket pork. Treat it like a Ribeye. The flavor profile – nutty, earthy, and rich – is something no other animal can replicate.
