How to Cook: Wagyu Bavette with Chimichurri Sauce

400 gr Wagyu Bavette steak
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil

For the Chimichurri Sauce:

1 cup fresh parsley, finely chopped
1/4 cup fresh cilantro, finely chopped
2 tablespoons fresh oregano, finely chopped
3 cloves garlic, minced
1/2 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon red pepper flakes
Salt and pepper, to taste

Instructions:

Prepare the Chimichurri Sauce:

In a small bowl, combine the chopped parsley, cilantro, oregano, and minced garlic.

Stir in the olive oil, red wine vinegar, red pepper flakes, and season with salt and pepper to taste. Let the sauce sit for at least 10 minutes to allow the flavors to meld.

Cook the Wagyu Bavette:

Let the Wagyu Bavette steak sit at room temperature for about 30 minutes before cooking.

Pat the steak dry with paper towels and season generously with salt and pepper.

Heat olive oil in a heavy skillet over high heat until hot but not smoking. Sear the steak for 3-4 minutes on each side or until desired doneness is reached.

Rest the steak for at least 5 minutes after searing.

Serve:
