What is Galbi?

Galbi (갈비), meaning "ribs" in Korean, typically features beef short ribs marinated in a sweet and savory sauce made with soy sauce, garlic, sugar, and sesame oil. The unique cut of the ribs—sliced thinly across the bone (flanken style)—makes them ideal for quick grilling and results in tender, flavorful meat with a slightly caramelized exterior.

Ingredients:

For the Marinade:
1/2 cup soy sauce
1/4 cup brown sugar
2 tablespoons honey
3 tablespoons sesame oil
1/4 cup grated Korean/Asian pear or apple
1/4 cup grated onion
2 tablespoons minced garlic
1 teaspoon minced ginger
2 tablespoons rice wine (mirin) or rice vinegar
1/2 teaspoon freshly ground black pepper

For the Ribs:
2 kg beef short ribs (available at The Ribeye Club)
Sesame seeds and chopped green onions for garnish

Instructions:

1. Prepare the Ribs
Rinse and Soak:
Rinse the ribs under cold water to remove bone fragments. Soak them in cold water for 30 minutes to draw out any residual blood, then drain well.
Tenderize: Using a meat tenderizer, gently pound the meat to slightly flatten and tenderize it. This step is optional but recommended for better texture.

2. Prepare the Marinade
Combine Ingredients: In a bowl, mix together the soy sauce, brown sugar, honey, sesame oil, grated pear (or apple), grated onion, minced garlic, minced ginger, rice wine (or rice vinegar), and black pepper until the sugar is dissolved.

3. Marinate the Ribs
Marinate:
Place the ribs in a large resealable plastic bag or shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Marinate in the refrigerator for at least 6 hours, preferably overnight, turning occasionally to ensure even marination.

4. Grill the Ribs
Preheat Grill:
Preheat your grill to medium-high heat. For authentic flavor, charcoal or wood charcoal (sootbul) is preferred, but a gas grill or grill pan works well too.
Grill: Remove the ribs from the marinade, allowing excess marinade to drip off. Grill the ribs for 2-3 minutes on each side until nicely caramelized and slightly charred.

5. Serve
Garnish and Serve:
Transfer the ribs to a serving platter. Garnish with sesame seeds and chopped green onions. Serve immediately with steamed rice, kimchi, and other Korean side dishes.

Marinating Time: For optimal flavor and tenderness, marinate the ribs overnight. The enzymes in the pear or apple help tenderize the meat naturally.

Avoid Burning: Due to the sugar content in the marinade, monitor the ribs closely while grilling to prevent burning. Adjust the grill temperature as needed.

Alternative Cooking Methods: If a grill is unavailable, you can broil the ribs in the oven. Preheat the broiler and place the ribs on a broiler pan. Broil for 5-6 minutes on each side until caramelized.
