At The Ribeye Club, we're dedicated to bringing authentic culinary traditions from around the world to your table. One of our proudest offerings - ideal for festive celebrations and memorable family gatherings - is the famed Segovian Milk-Fed Piglet. With its incredible tenderness, mouthwatering juiciness, and uniquely crisp, golden skin, it’s truly a centerpiece dish that embodies Spanish gastronomic heritage.
What is a Segovian Milk-Fed Piglet?
Known locally as cochinillo asado, this piglet is raised exclusively in Segovia, a historic Spanish city renowned for its vibrant culinary scene and deep-rooted cooking traditions. These piglets feed solely on their mother's milk, a practice strictly maintained by small, traditional family farms. This careful nurturing creates a truly unique and distinguished meat: remarkably tender, delicately flavored, and exceptionally aromatic.
Due to this exclusive milk diet, the meat achieves an unparalleled soft texture, while a thin layer of fat ensures it roasts to crispy, flavorful perfection. It’s this balance of tender meat and crispy, crackling skin that has earned the Segovian Piglet worldwide acclaim.
The History & Heritage of Segovian Piglet
Segovia has proudly cultivated this culinary tradition for hundreds of years, turning what began as a local specialty into a dish celebrated globally.
In fact, the roasting of Segovian Piglet is regarded as such a prestigious tradition that it holds an official protected status - ensuring the strict adherence to the traditional farming and culinary methods. To authenticate this specialty, local restaurants often ceremonially carve the roasted piglet with the edge of a plate, demonstrating its incredible tenderness - a tradition that impresses diners and underscores the quality of the dish.
How to Roast the Perfect Segovian Piglet at Home
Bringing this legendary dish to your own kitchen is simpler than you might imagine:
Ingredients:
1 Whole Segovian Milk-Fed Piglet (approximately 6kg)
Coarse sea salt
Olive oil (optional, traditional recipes often rely solely on the piglet's natural fat)
Fresh herbs such as rosemary or thyme (optional)
Traditional Roasting Method:
1. Preparation:
Pat dry the piglet thoroughly. Season generously with coarse sea salt, inside and out. Let it rest at room temperature for about an hour before roasting.
2. Roasting:
Place the piglet belly-side down on a roasting rack in a large pan. Roast in a preheated oven at 170°C (340°F) for around 2.5 to 3 hours. Avoid frequent opening of the oven to maintain even heat.
3. Achieving Crispy Skin:
In the last 20 minutes, increase oven temperature to 200-220°C (400-425°F). Roast until the skin turns deep golden and crispy. This final high heat blast is key to achieving the perfect crackling.
4. Rest and Serve:
Remove the piglet from the oven and let it rest for 10-15 minutes to redistribute its natural juices. Serve traditionally carved into succulent pieces.
Ideal Serving Suggestions
Traditionally, Segovian piglet is served simply, allowing the natural flavors to shine:
Pair with roasted potatoes, seasoned with garlic and rosemary.
Accompany with a fresh salad lightly dressed with olive oil and lemon.
Complement your roast with a robust, full-bodied Spanish red wine like a Rioja or Ribera del Duero for an authentic experience.
