Castilla y León Half Milk-Fed Lamb (~3.5kg)
Coarse sea salt
Fresh rosemary and thyme sprigs
Olive oil (optional)
Freshly ground black pepper (optional)

Roasting Instructions:

1. Preparation: Remove the lamb from refrigeration about an hour before cooking. Pat dry with paper towels. Season generously with coarse sea salt, rosemary, and thyme. Drizzle lightly with olive oil if desired.
