Welcome to another gourmet adventure at The Ribeye Club, where we transform ordinary meals into extraordinary dining experiences. Today, we’re sharing a special recipe that highlights the sublime flavors and textures of veal: our Grilled Herb Crusted Veal Rack.

Why Veal? Veal is a unique protein with a mild flavor that perfectly absorbs the aromatic blends of herbs and spices. It's a meat that, once tried, is always adored.

Ingredients:

For the Veal:
3.2 kg rack of veal
4 tablespoons minced garlic
3 tablespoons fresh rosemary (finely chopped)
3 tablespoons fresh mint (finely chopped)
3 tablespoons fresh thyme (finely chopped)
Zest from two lemons
3 teaspoons sea salt
1½ teaspoons fresh cracked pepper
1/3 cup olive oil

For the Grill:
Herb scraps (leftover from the above herbs)
2 medium onions (quartered)
8 cloves of garlic
5-6 sprigs of rosemary

Instructions:

1. Prepare the Herb Paste:

- Strip all fresh herbs off their stalks and finely mince them.

- In a small bowl, mix together the minced herbs, garlic, lemon zest, sea salt, and pepper. Add the olive oil to form a thick paste.

2. Marinate the Veal:

- Lay the veal rack on a large sheet of plastic wrap.

- Smear the herb paste all over the surface of the veal, ensuring it is evenly coated.

- Wrap the veal tightly in plastic wrap, place it on a tray, and refrigerate for at least 5 hours, preferably overnight.

3. Prepare the Grill:

- Remove the veal from the refrigerator and let it sit at room temperature for about 1 hour before grilling.

- Preheat your grill to a consistent temperature of 275°F to 300°F (135°C to 150°C), setting up for indirect heat if you’re not using a rotisserie.

4. Grill the Veal:

- If using a rotisserie, secure the veal on the spit and set it up according to your grill’s specifications.

- For a regular grill, place the veal over indirect heat, and position the bones facing towards the heat source.

- Around the veal, place the quarters of onion, whole garlic cloves, and rosemary sprigs to infuse the meat with aromatic smoke.

- Close the grill lid and allow the veal to cook, maintaining a steady grill temperature and turning occasionally.

5. Check the Temperature:

- Begin checking the internal temperature of the meat after about 1.5 hours, aiming for an internal temperature of 125°F (about 52°C) for a perfect medium-rare.

6. Reverse Sear (Optional):

- Once the desired internal temperature is nearly reached, prepare the grill for direct high heat.

- Sear the veal over direct heat, turning frequently, to develop a rich, golden crust all around.

7. Rest and Serve:

- Remove the veal from the grill and let it rest for 10-15 minutes under a foil tent.

- Carve between the bones and serve, ideally with a drizzle of the cooking juices collected during the grilling.
