•1kg octopus, cleaned and tenderized
•60ml extra virgin olive oil
•2 cloves garlic, minced

For the salad:

•250g cherry tomatoes, halved
•1 cucumber, sliced
•1 small red onion, thinly sliced
•100g Kalamata olives
•100g feta cheese, crumbled
•Fresh parsley, chopped, for garnish


1. In a large pot, bring salted water to a boil. Add the octopus and cook for 45-60 minutes, or until tender. Remove the octopus from the pot and let it cool.

2. Preheat your grill to medium-high heat.

3. In a small bowl, mix the extra virgin olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and pepper.

4. Cut the cooled octopus into bite-sized pieces and toss with the olive oil mixture.

5. Grill the octopus pieces for 2-3 minutes per side, until slightly charred and heated through.

6. In a large serving bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese. Add the grilled octopus and gently toss.

7. Garnish the salad with fresh parsley and serve immediately.
