Ingredients

For the Foie Gras:
10 slices of Goose Foie Gras (about 50g each)
2 tsp sea salt
2 tsp freshly ground black pepper

For the Caramelized Apples:
3 medium-sized apples (Granny Smith or Honeycrisp)
2 tbsp unsalted butter
3 tbsp brown sugar
1 tbsp apple cider vinegar or Calvados (apple brandy)
A pinch of cinnamon

For Garnish:
Fresh thyme or microgreens

Instructions:

1. Prepare the Apples
Slice the Apples:
Peel, core, and slice the apples into 1cm thick wedges.
Caramelize: In a skillet over medium heat, melt the butter. Add the apple slices and cook for 2-3 minutes on each side until they begin to soften.
Add Sugar and Flavoring: Sprinkle the brown sugar and a pinch of cinnamon over the apples. Stir gently to coat. Add the apple cider vinegar or Calvados and cook for another 2-3 minutes until the apples are golden and caramelized. Remove from heat and keep warm.

2. Sear the Foie Gras
Preheat the Pan: Heat a non-stick skillet over medium-high heat. Foie gras has a high fat content, so there’s no need to add oil.
Season the Foie Gras: Pat the foie gras slices dry with paper towels and season both sides with sea salt and black pepper.
Sear: Place the foie gras slices in the hot skillet and sear for 30-40 seconds per side until golden brown and slightly crisp on the outside. Remove from the pan and let rest for a moment.

3. Assemble the Dish
Plate the Apples: Arrange the caramelized apple slices on a serving plate as a base.
Add the Foie Gras: Gently place the seared foie gras slices on top of the apples.
Garnish: Add a sprig of fresh thyme or microgreens for a pop of color and aroma.

Serve this dish as an appetizer or a luxurious main course alongside toasted brioche or crusty bread. Pair it with a sweet wine like Sauternes, which complements the richness of the foie gras and the sweetness of the apples.
