Succulent Easter Feast:
Whole Segovian Pork Recipe

This succulent, tender, and flavorful dish will be the star of your holiday table, leaving your guests craving more. Follow our simple recipe below to create a memorable and delicious Easter meal for your family and friends.

Ingredients:

•1 Whole Segovian Pork (approximately 5 kg)
•1/4 cup olive oil
•1/4 cup fresh lemon juice
•6 cloves garlic, minced
•2 tbsp fresh rosemary, chopped
•2 tbsp fresh thyme, chopped
•Salt and freshly ground black pepper
•Optional: fresh parsley and lemon wedges for garnish

Instructions:

1. Preheat your oven to 325°F (160°C).

2. In a small bowl, combine olive oil, lemon juice, minced garlic, rosemary, and thyme. Mix well to create a flavorful marinade.

3. Pat the Whole Segovian Pork dry with paper towels and place it on a large roasting pan. Season the pig generously with salt and freshly ground black pepper.

4. Rub the marinade evenly over the entire surface of the pig, making sure to cover both the outside and inside cavities.

5. Roast the pig in the preheated oven for about 4-5 hours, or until the internal temperature reaches 160°F (71°C). Baste the pig every hour with the pan juices to ensure it remains moist and flavorful.

6. Once the Whole Segovian Pork is fully cooked, remove it from the oven and let it rest for 20 minutes before carving.

7. Garnish the platter with fresh parsley and lemon wedges for a beautiful presentation.

8. Serve your masterpiece alongside your favorite Easter side dishes and enjoy a truly memorable feast.
